I am looking for ways to use up my quart of Buttermilk. What is your favorite way to use it up????????

I had the same problem last week - so I made buttermilk pancakes for the freezer and biscuits (yum)!!!!!!!!! I think they should make buttermilk in smaller cartons!!

my grandmaw always used it to soak her fish in before frying! I dont know if you can use ANY fish but it was always with catfish. She said it helped with the fishy taste.....so maybe it can be used with any fish?

Homemade ranch dressing, buttermilk vanilla ice cream, macaroni salad . . . I have the same problem sometimes. I'll have a recipe that calls for half a cup of buttermilk and then what do I do with the rest?:confused:

This is a really great recipe that HTBH posted recently.
Buttermilk Salad
1 can (20 oz.) unsweetened crushed pineapple, undrained
3 Tbsp. sugar
1 large pkg. (6 oz.) peach or apricot flavored Jell-O
2 cups buttermilk
1 carton (8 oz.) Cool Whip, thawed
1 cup chopped pecans or walnuts
In a saucepan, combine pineapple and sugar; bring to a boil, stirring occasionally. When mixture comes to a boil, immediately add Jell-O and stir until dissolved. Remove from heat; cool slightly. Stir in buttermilk. Chill until partially set (about 45 minutes). Fold in Cool Whip and nuts until thoroughly incorporated. If necessary, chill until mixture mounds slightly. Pour into a lightly oiled Jell-O mold (8 1/2 cups) or a 9x13x2 Pyrex pan. Chill overnight. Serves 12-16.
NOTES: I used one 3 oz. pkg. of apricot and one of peach flavored Jell-O when I made it this time. I like this flavor combo instead of two of the same flavor. I also prefer the taste of pecans in this recipe.

I seldom buy buttermilk any more. I now buy the dry buttermilk powder (on the same aisle as dry milk). When I do buy it, I use it in cornbread, and as an overnight soak for chicken before frying it.

I agree with everyone else but would like to add a couple of uses. I dip chicken and okra in buttermilk before breading and frying. I make egg bread with buttermilk as well. Buttermilk is a great soaker for most meats like pork, chicken,fish, and venison to help tenderize and flavor. I love buttermilk !!!

LOL! I don't know about the others but I don't like buttermilk. My DH likes to drink buttermilk and eat cornbread. :eek:

I thought about mentioning that as a use but opted out since so many people hate the taste. I personally love buttermilk as did my parents. When I was growing up my parents said during the depression there was nothing better than a cold glass of fresh buttermilk with cornbread and onion broken up into it. IF there was any bacon or streak of lean left from breakfast they would put that into the mix as well. Often they said that is what people had for dinner since things were in such bad condition. My favorite among favorites use is breaking up Oreo cookies into buttermilk and letting it get a bit soft. You can spoon it up almost like a pudding. My kids love this snack. It is ugly but it is divine :D

This may not work for some; however, I freeze the leftover unexpired buttermilk in one cup portions. The thawed product seems to work fine for cooking. Also, but not so appetizing, my friend says her plumber told her to put the expired buttermilk down her toilet because it was good for her septic system. I can't verify that tip, but my friend is a very smart lady.

Isn't there some formula to change regular milk to buttermilk...like add a T of lemon juice to a cup of regular milk to make buttermilk?? I know I've read that somewhere!

That is the formula, but you can also use white vinegar instead of lemon juice. Let it set for about 5 minutes and it will be like buttermilk.

I don't drink buttermilk. Don't like the taste of it, by itself. I do love the flavor it gives to cornbread or biscuits. I use buttermilk instead of water. Atleast half water/half buttermilk. I even use it when breading stuff. (i.e. chicken, steak, pork chops) Either dip in eggs,buttermilk,cornmeal/breadcrumbs or just buttermilk and cornmeal/breadcrumbs.
