I made chicken salad yesterday.

I have never used a recipe...depends on my mood how it ends up.
Here is what I did for my salad.

4 large boiled chicken breasts shredded
3 stalks of celery finely chopped. I always "string" my celery
1 bag of craisins
8 oz. of chopped pecans
enough dukes mayonnaise until the consistency "looked right"
I also added salt,pepper and a tiny bit of dried tarragon leaves crushed.
I ended up with a very large bowl...enough for my daughter,sons and grandchildren.

I have used different things in chicken salad;apples,grapes,nuts,celery,minced
onion,raisins.Sometimes. I use curry powder and lemon juice with the mayonnaise.Tarragon adds a nice flavor.

1 pkg. (6 oz.) OSCAR MAYER Oven Roasted Chicken Breast
Cuts 1 apple, chopped 3 Tbsp. PLANTERS Honey Roasted Peanuts 3 Tbsp. MIRACLE WHIP Dressing 4 cups torn salad greens COMBINE all ingredients except salad greens.

PLACE greens on three salad plates; top with chicken mixture.

SERVE with WHEAT THINS Crackers.
