I’m sure it’s been asked before - but what do you do for a really fast, simple meal with little cleanup and time involved. Please don’t say Pizza Hut!

Spaghetti is pretty quick with minimal clean up.

I usually prepare a main dish salad with leftover meat like chicken or pork tenderloin. Any one dish meal is usually quick and clean up a snap. Something that saves me a lot of time is to cook more pasta or rice than I need so I cook once and eat twice. I use these in casseroles or as the base for a good stir-fry. Don't know about anyone else but I always cook a few servings more of most things than we will eat at one sitting and then we have clean out the fridge night at some time during the week.

Here's one of my favorite, I don't really feel like cooking tonight, recipes.

It's not fast, it does have to bake for a while, but it's fast in the sense that there's minimal prep time and one pot clean up.

This is my take on a traditional pot roast. Also, this is a very versatile recipe in that you can vary the amounts to feed ever how many people you need to feed.

As a general rule, I'm cooking for three and then leftovers that I have for lunch the next day. Also, I love potatoes, so I use a lot of potatoes in this.

I start with a small roast, usually eye of round. I put that in a dutch oven, then add half a dozen carrots, eight to ten potatoes and a couple of onions. I generally cut the carrots in half and the potatoes in halves or thirds. I slice the onions up, but I don't chop them.

I arrange the vegetables all around the roast and then I sprinkle some spices all over the roast and vegetables. I generally use 1 tsp. salt, 1/2 tsp pepper, 1 tsp basil and 1/2 tsp garlic powder. After that, I pour about 1 cup of red wine over the roast and the vegetables.

Put the lid on it and bake at 350 until done to your taste. In my case, if I have roast beef by itself, I like it to be a bit rare, but for this recipe, I generally cook it about 30 minutes per pound.

That's the only drawback in that it does have to cook for a while, but the prep time shouldn't be more than about 10 minutes and the only clean up is one knife, a vegetable peeler, one cutting board and then the pot itself.

Rotisserie chicken. You can make sandwiches, salad, add to green salads, use with pasta, make chicken and rice, chicken and dumplings, chicken soup. Also, the price is usually right - not much more than a raw chicken.

I know you said no Pizza Hut, but I will at times buy a top line frozen thin crust and doctor it up. We add broccoli, onions, tomatoes, blue cheese, mushrooms, olives, peppers etc. Just the chopping of the additional items and a sprinkling of cheese. Salt, Pepper and pepper flakes.
