So - what is your favorite cookie to make? Do you have one that everyone asks for? Share your recipes if you can. I'm not much of a cookie baker but have an itch to do so right now and am pulling together a few recipes that are out of the ordinary. TIA!

Luv...I just love cookies. It is kind of a new thing for me. The last couple of years I have found I just love cookies...chewy ones! A few years ago my daughter's k5 teacher gave me some chewy molasses cookies and they hooked me. I have tried to duplicate the recipe and never have gotten the exact texture.

I did find an easy sugar cookie recipe made with yellow cake mix that bakes up nice and soft...I will look for the recipe! Good thread.

I would love the recipe for the molasses cookies if you could get it from your friend? I love old time cookie recipes, they just have such simple flavors.

I love cookies, too. I really like the Toll House recipe and the oatmeal cookies on the Quaker box. I don't add raisins but add chocolate chips and nuts.

You know, SS, that reminds me of some molasses cookies a friend sent to me this summer, in a package. OH MY GOSH, they were SOOOOO good!! They were very soft and chewy. I ate almost every one, except for the ones I gave to family. :o

And, in a pinch, as for bought cookies, I like Archway Windmill and Molasses cookies. Really good with coffee or hot tea.

Archway...DOES make a pretty mean molasses cookie!

My mom makes a really good one from a Martha Stewart recipe, it has dried cherries, pecans and toffee bits. Wish I had a whole plate of them now :rolleyes:

I had a sugar cookie at Christmas, from a friend, and it had pistachios in it, and a luscious icing, and melted in my mouth. It also had kind of a lemony taste. Wish I could remember the name. And, now, I'm going to have to ask her for the recipe!

These have become one of our favorite cookies. I got them over on Cooking Light BB - one of the posters tweaked them and this is the final result - excellent!!

Five Grain Rolled Cereal Daybreak Cookies

1/2 cup butter -- melted
1 c packed brown sugar
1 egg
1 tsp vanilla extract
1 c flour
1/4 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1 1/2 cups five-grain cereal (I used Red Hill)
1/2 cup sweetened coconut flakes
1/2 c dried cranberries
1/2 cup pecan halves -- chopped

Preheat oven to 350 degrees. 320º convection for 5 and 5 minutes. (10 minutes) Two Dacor cookie sheets, 6 and 6 minutes. Line cookie sheets with parchment paper.

Blend melted butter and sugar with a whisk until smooth. Add vanilla and egg to butter mixture and mix well. In a medium bowl, stir together the flour, baking soda, baking powder, salt, and cereal. Stir flour mixture into egg and butter mixture until just combined. Add remaining ingredients, mix until combined. Drop 1 1/2 inch balls (about 2 tbsp per ball) onto parchment lined cookie sheets.

Bake 10 minutes or until lightly brown on edges but still soft in the middle. Cool 2 minutes on cookie sheets and then remove to wire racks to cool completely.


Makes 20 cookies.

JudyAZ, those Daybreak Cookies sound yummy! I'll have to see if I can find five-grain cereal.

Here's a cookie recipe I tried for the first time this summer. Very delicious.

Pumpkin White Chocolate Chunk Cookies

Makes 2 dozen 3” cookies

2 cups all purpose flour
1 tsp baking soda
1 cup butterscotch chips
12 TBS (1 ½ sticks) unsalted butter, softened
2/3 cup granulated sugar
2/3 cup packed light brown sugar
1 large egg
2/3 cup cooked canned pumpkin puree or fresh mashed pumpkin
1 cup old-fashioned rolled oats
8 oz white chocolate, cut into ¼” chunks, or 1 ½ cups white chocolate chips
1 cup chopped walnuts

(1)Preheat the oven to 350 degrees. Line two baking sheets with parchment paper or grease lightly.

(2)Put the flour and baking soda in the bowl of a food processor fitted with a metal blade and pulse to distribute the baking soda evenly. Add the butterscotch chips and process until the chips are ground, with some slightly larger bits remaining. Turn the flour and butterscotch chips out into a large bowl.

(3)In a separate bowl, cream the butter, granulated sugar and brown sugar together for 2 to 3 minutes, scraping down the bowl from time to time, until fluffy. Add the egg and pumpkin puree and stir to combine.

(4)Pour the butter-pumpkin mixture into the flour mixture and stir to combine. Add the oats, white chocolate chunks and walnuts and stir until the ingredients are combined and no flour is visible. Cover the bowl and refrigerate for at least 10 minutes or overnight.

(5)Use a ¼ cup measure or ice cream scoop to drop the cookie dough onto the prepared cookies sheet, leaving 2 inches between the cookies.

(6)Bake the cookies on a center rack in the oven for 13 to 15 minutes, rotating the cookie sheets halfway through for even baking, until they’re light golden brown and no longer doughy looking. Cool the cookies on the cookie sheets for 10 to 15 minutes before transferring them to a wire rack or clean surface to cool completely.

I love cookies, would pass on cake and pie for a cookie. My fave are good old choc chip w/ pecans. I also LOVE peanut butter cookies. In the fall I make a pumpkin cookie that's yummy - kinda cakelike. I make scads of cookies for the holidays. I like to make lemon sugar cookies in the summer to have with sweet tea on the deck. Cookies make me :D

I found this recipe on the inside of a Land O Lakes Margarine box several years back. I bake dozens of these every Christmas. I substitute choc chips for the candy most of the time.

Candy and Nut Cookies

1 c sugar
1 c firmly packed brown sugar
1 c Land O Lakes margarine (softened)
2 eggs
1 Tbl vanilla
2 c all purpose flour
1 1/2 c quick cooking oats
1 tsp baking soda
1/2 tsp salt
1 (16 oz) bag of candy coated chocolate pieces (bag of chocolate chips)
1 c coarsely chopped peanuts (I use pecans)

Heat oven to 350 deg. In large mixer bowl combine sugar, brown sugar, margarine, eggs and vanilla. Beat at med speed, scraping bowl often, until creamy (2-3min) Reduce speed to low; add all remaining ingredients except candy/choc chips and nuts. Beat, scraping bowl often, until well mixed. By hand, stir in candy and nuts.

Drop dough by tbl spoon onto greased cookie sheet. Bake 10-12 min or until golden brown. Time will vary; I prefer my cookies soft in the middle.

This cookie is so good! My friend Donna brought them to one of my cookie swaps 5-6 years ago. It is dh's favorite.

Spice Cookies

1 1/2 cups softened shortening
2 cups sugar
2 eggs
1/2 c molasses

Beat thoroughly above ingredients.

Combine:
4 cups sifted all-purpose flour
2 tsp cinnamon
4 tsp baking soda
1/2 tsp salt
1 1/2 tsp ginger
1 1/2 tsp clove

Gradually add flour mixture to batter. Place dough on wax paper (I store in a covered plastic bowl), cover and chill 1-2 hours. Form into 1 inch balls and place 2 inches apart on a non-stick cookie sheet. Bake at 375 for 8-10 min. I prefer 8 min for a soft in the middle cookie.

Last Christmas Land 'o Lakes put out a Cookies issue that has some excellent cookies in it. We especially enjoyed the cut out gingerbread ones. Will look for my issue and post it.

Gingerbread Cookies
1 1/4 cups sugar
1 cup butter, softened
1 egg
3 tablespoons dark corn syrup or molasses
1 teaspoon vanilla
3 cups all-purpose flour
1 1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground cloves
Powdered sugar

Instructions:

Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add egg, corn syrup and vanilla; continue beating until well mixed (1 to 2 minutes). Reduce speed to low; add all remaining ingredients except powdered sugar. Beat until well mixed (1 to 2 minutes).

Divide dough into thirds. Shape each third into round ball; flatten to 1/2-inch thickness. Wrap in plastic food wrap. Refrigerate until firm (1 to 2 hours) or up to 3 days.

Heat oven to 375°F. Roll out dough on lightly floured surface, one-third at a time (keeping remaining dough refrigerated), to 1/8-inch thickness. Cut with 2 to 3-inch star cookie cutters. Place 1 inch apart onto ungreased cookie sheets. Bake for 5 to 7 minutes or until set. Let stand 1 minute; remove from cookie sheets. Cool completely. Sift powdered sugar over cooled cookies.
Yield 6 dozen

I do most of my posting on the CL BB, but 99% of my recipes are no where near light. no matter, they like all kinds of recipes on that BB.

I can also vouch for Frosty, aka valchemist. I am starlight on CLBB. She has wonderful recipes! She can also answer most questions about baking ladies!

I LOVE a cooke that I do not have the recipe for. Maybe Frosty or someone can help. They are chocolate thru and thru and are VERY soft and moist on the inside and slightly crunchy on the outside. Wonderful! :)

I also love Snickerdoodles and the cookies made w/ pnb and a tiny snickers bar rolled inside the dough! I a drooling now!!!! :D

I love the Quaker's Best Oatmeal Cookies that is off of their container. I add a whole bag of peanut butter chips to them when I make them. They are delicious.

I have a good Snickerdoodles recipes that I got off of the board from an old poster. Let me know if you want it.

I also love the recipe off of the bag of Cholo. chips but I have another that I adore just as well, very moist.

I have a darn good M&M cookie recipe also!

Two more that aren't cookies but along the same lines that I love is a candy bar brownie recipe from BHG that is wonderful and a buckeye ball recipe that IMO is the best I have had.

Here's one of my favorite chocolate chip cookie variations. I believe this is an old Crisco recipe since it calls for butter flavored Crisco. I've been making these for years now and everyone loves the hint of malt.

Malted Chocolate Chip Cookies

1 cup butter flavored Crisco
1 1/4 cups packed light brown sugar
1/2 cup malted milk powder
2 Tablespoons chocolate syrup
1 Tablespoon vanilla extract
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1 1/2 cups milk chocolate chunks OR milk chocolate mini kisses OR chopped Hershey bars (about 4 1/2 to 5)

In a mixing bowl, combine shortening, brown sugar, malted milk powder, chocolate syrup, and vanilla; beat for 2 minutes.

Add egg and mix.

In a small bowl mix flour, baking soda, and salt. Gradually add to creamed mixture.

Stir in chocolate chips and chunks.

Shape into 1 1/2 to 2 inch balls; place about 3 inches apart on ungreased baking sheets.

Bake at 375 degrees for 10 to 14 minutes or until golden brown.

Cool for 2 minutes on pan before removing to wire racks to cool completely.

Yield: about 1 1/2 to 2 1/2 dozen

Here's another good one. They have that nice cruncy, shiny top! I've changed the wording quite a bit, but the recipe is Alton Brown's.

Cocoa Brownies

4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter
1 1/4 cups cocoa, sifted (natural cocoa, not dutch process)
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon kosher salt

Preheat the oven to 300 degrees F. Grease an 8-inch square pan and line with parchment. Or line with foil and spray with Pam.

Mix the sugars, cocoa, flour, and salt together.

Beat the eggs until fluffy and light yellow. Add the dry ingredients alternately with the melted butter. Pour the batter into square pan and bake for 40-45 minutes.

Remove from pan and let cool.

I used to read Val's recipes over on CLBB too and she is a good cook.

Snickerdoodles (makes 4 dozen)

1 1/2 cups sugar
1/2 cup butter or margarine, softened
1/2 cup shortening
2 eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sugar
2 teaspoons ground cinnamon

Heat oven to 400ºF. Mix 1½ cups sugar, the butter, shortening and eggs in large bowl. Stir in flour, cream of tartar, baking soda and salt. Shape dough into 1 1/4-inch balls. Mix 1/4 cup sugar and the cinnamon. Roll balls in cinnamon-sugar mixture. Place 2" apart on ungreased cookie sheet. Bake 8-10 minutes or until set. Remove from cookie sheet to wire rack.

These cookies have a crackled appearance when baked due to rolling in cinnamon-sugar.

Not a cookie BUT I just love these. I think they are the best Buckeye Balls that I have tasted.

1/2 cup butter, melted
1 pound confectioners' sugar
1 1/2 cups peanut butter
1 tsp. vanilla extract
2 cups semisweet chocolate chips (I have also used full sweet chocolate & YUM! but the chose is yours)
1 TBS. shortening

Combine the melted buter, confectioners' sugar, peanut butter and the vanilla together and mix well. Refrigerate for 1 hour or until firm. Roll into 1 inch balls and place on waxed paper.

In the top half of a double boiler melt the chocolate chips and shortening, stirring constantly (I have done this very successfully in the microwave). Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. Refrigerate until chocolate is firm.

I got this recipe from a woman named Wheaties85 on the BHG board in early 2002. They were very moist which I like.

Chocolate Chip Cookies (other then the famous Nestle's which I adore).

1/2 cup butter (no substitutes)
1/2 cup vegetable shortening
1/2 cup sugar
1/2 cup brown sugar
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
2 eggs
2 cups flour
2 cups chocolate chips

Preheat oven to 350. Cream butter and shortening. Add sugars and beat well. Mix in vanilla and eggs. Mix in salt, baking soda and stir in chips. Drop cookies onto an ungreased cookie sheet and bake for 8-10 mins. until edges are starting to set. Middle will look doughy. Hint: the trick to getting and keeping these cookies soft is to not bake them for very long.

As for a savory cookie, hands down, my favorite is SSCG's blue cheese crisps/wafers. Make you want to slap your pappy!
