DH and I are hosting our first big party at the house we bought last year. Rather make it one day, DH thought we should schedule it for two days in case of rain and for people who can not make it on one day.
It will be the weekend of September 10 and 11.
What are some menu ideas?
Also I will have limited time on Sunday to prepare food, yet I want to offer more than leftovers from the day before. What do y'all suggest?

Catfish: Do you have a theme or anything for your party? I know you live on water and since you talked about rain I'm assuming this will be an outdoor thing?
Could you do maybe chicken and shrimp skewers on the grill, you could have them all made ahead of time and then just grill a few more as people showed up. They grill pretty fast and also keep pretty well in a chafing dish. Toss in three or four salads and some of Ina's brownies and you've got a party of things that were all basically prepared ahead of time.

I second the skewers idea. We did some beef skewers at a crawfish boil we had. Not certain that everyone would love crawfish as much as I do, I wanted to offer something else.
We did flank steak cut into long thin strips and wove them onto bamboo skewers. We had marinated them in oil olive, lemon juice, worshtishire (sp?) sauce and some fajita seasoning. And I think some garlic powder. Just dumped enough of each into make a really liquidy paste. And we marinated overnight and just pulled out enough as we needed them. They were very yummy.

You could do BBQ sandwhiches and all the fixings. I hosted a HoneyDo Shower back in May and we did this - it was a hit. We ordered the BBQ pulled pork and I fixed BBQ Beans, Potatoe Salad, Chips (for kids) and Brownies for Dessert. It was super easy especially for someone who is really busy. - Just an Idea!

A seafood boil would be easy, too, if you had everything already cut up (potatoes, onions, corn on cob, sausage) and just started cooking it in a big pot and maybe have cole slaw and dessert. It would be wonderful and it's always a big hit. "Frogmore" stew or something else is what I've heard it called.

Thank you for the wonderful ideas. The reason I have not gotten back is because I am working on the party.
Our theme is BBQ/easy living weekend. We are having it outdoors to take advantage of living on the water. We can move it all indoors if we have to. I have spent today making as much ahead of time as I can. I have posted the menu on another thread. I like the skewers part. We have two slabs of ribs with my own BBQ sauce, one for each day. I have already made the sauce.
