We are having a covered dish luncheon in my office tomorrow and we were discussing today, that there are several people who have to bring certain things for it to be a coverd dish. So along that line - share what recipe you are known for... share the recipe with us if you will... Here's mine
Black Bean Dip
2 cans Black Beans, drained and rinsed
1 can rotel tomatoes
1 8oz carton sour cream
2 cups shreded colby / jack cheese
1 bunch green onions chopped
Mix black beans, tomatoes, sour cream and onions well. Add a 1/2 of cheese and mix. Pour into greased casserole dish (i usually use a deep dish pie plate), cover with remaning cheese. Bake at 350° for 30-35 minutes or until bubbly. Serve warm with tostitos scoops.

Crockpot Corn or a chicken pasta dish that (I think) is to die for!
People like the blue cheese & chives crackers I make, but I'm looking for a more exciting "signature" dish :D

Funny because the universe has the recipe, but I have been asked to take Dirt Cake to 100 functions.
Also, gumbo is a HUGE request when it's cool outside (got the recipe a long time ago from BamaCracker), potato salad, Pepper Jelly Dip, cheesecake, broccoli salad.
Pepper Jelly Dip
1 1/2 c. sharp shredded cheddar cheese
1 1/2 c. pecans, chopped (I toast first)
1 bunch green onions, chopped
Tony's seasoning (2-3 dashes)
1 jar pepper jelly (red or green)
Hellmann's mayonnaise
Mix cheese, green onions, and pecans with enough mayo. to hold it together. Spray a square pan (8 x 8) with Pam spray. Pat down the above mixture into the pan. Pour pepper jelly over top. Serve with good crackers. Pretty at Christmas to make two - one green and one red.

Greek Layered Dip
Serve in on oval platter or in a pie plate.
Layer items as follows, starting with bottom:
8 oz. onion and chive cream cheese
8 oz. Hummus
1 diced and peeled cucumber
1 diced tomatoe
1 bunch sliced green onions
1 can sliced black olives
1 pkg. crumbled feta cheese
Sprinkle fresh or dried oregano on top. Serve with Pita Chips.

I'm usually asked to prepare the 'Oriental Salad'...
1 head Napa cabbage, shredded
1 head green leaf lettuce, shredded
2 bunches green onions, chopped
(the above can be prepared ahead of time and stored in refrigerator; I also use a large disposable lasagna pan)
Mix together:
1 C oil
1 C sugar
1/2 C cider vinegar
1/4 C soy sauce
(May be refigerated or stored at room temp until ready for use)
Brown together in skillet:
1 stick butter
1 C sliced almonds
2 pkgs dry ramen noodles (any flavor, DISCARD seasonings)
1/2 C sesame seeds
Brown the above 4 ingredients in skillet until light brown (does that make sense? LOL)
Remove salad greens from refrigerator, add dressing and crunchy toppings. Hide any extra servings you may want for later, because this salad won't last!

My most requested cookie is my Gingersnaps. They are crisp on the outside and chewy on the inside.
Gingersnaps
3/4 C. butter flavored shortening
1 C sugar
1/4 C molasses
1 egg
2 C flour
1/2 tsp. salt
2 tsp. baking soda
1/2 tsp. ground cloves
1 1/2 tsp. ground ginger
1 tsp. ground cinnamon
Beat shortening and sugar until light and fluffy. Add molasses and egg. Mix well. Combine dry ingredients and add to sugar mixture. Mix well. Roll dough into 1 inch balls and roll in granulated sugar. Bake on lightly greased baking sheet at 350 degrees for 13 minutes for a standard oven.
320 degrees for a convection oven - 12 minutes.

DH is always asking me to cook "Chicken Casserole." It is a recipe I got from our Campbell's Soup cookbook when we first got married. He practically dances around the kitchen when I am cooking it. I am at work, so I don't have the recipe with me! It has Grand's Biscuits baked on the top though!

My family just raves about my homemade brownies with homemade chocolate frosting and I don't know why, because I got the recipe right off the back of the Hershey's coccoa can and I'm not afraid to tell them so! And really it's no harder to make than opening up a box of brownie mix, but they request my brownies for every family get together.

My Lemon Ice Box Pie
I use a graham cracker crust
and cool whip for the topping.
2 egg yolks
1 can of Eagle Brand Milk
1/2 cup of lemon juice
Beat the last three ingredients together
and pour into crust. Top with cool whip.
Refrigerate for about 2 hours before serving.

Hot Sausage Dip ***
1 pound hot sausage, brown and drain
Melt in a pot:
2 -8 ounces cream cheese
1 large picante sauce
1 can rotel
Add your sausage. Keep warm in a crock pot. Serve with Tostito Scoops
You can make it even hotter by adding hot picante and hot rotel

MMMM - my Mom always iced her brownies and they were so good that way. You seldom see brownies iced any more and I don't know why. I think I just may drag out that recipe and bake some for tonight.
I think I've gained 5 pounds since this board's been back up and going. :D

This is to die for!
Garlic-Sesame Halibut
Marinade:
6 cloves garlic, minced 3 T rice wine vinegar
1 T peeled, grated ginger 3 T sesame oil
2 T minced, fresh cilantro leaves (+more for brushing)
3 T. sugar 1 t coarse salt
Ό cup soy sauce 1 t black pepper
Rinse the fish fillets under cold running water and blot dry with paper towels. Arrange the fillets in a baking dish just large enough to hold them.
Combine ingredients for marinade and spoon onto both sides of the fillets. Cover the fish with plastic wrap and let marinate in the refrigerator for an hour, turning the fillets once or twice.
Brush the fish basket with sesame oil and place fish in basket. Grill until each side of the fillets is browned and cooked through (about 4-6 minutes per side).

Hello Delta/Six Layer Bars
1 stick butter
1 cup crushed vanilla wafers
1 cup semi-sweet choc. chips (I mix the semi with some milk choc., and I use a little more than a cup)
1 can coconut
1 cup chopped pecans
1 can sweetened condensed milk
In a 9x13 pan, melt the butter. Layer in order, evenly: the vanilla wafers, choc. chips, coconut, pecans. Pour condensed milk over all, evenly. Do not mix!! Bake @ 360 degrees about 30 minutes, or until lightly browned on top. Careful not to burn around edges. Loosen from the sides before cooling and cutting. Cut into small bars after cooling.
I know this is a recipe that is similar to others I have seen, but the difference here, I think, is using the vanilla wafers instead of the graham cracker crumbs, and then pouring the condensed milk on top. Plus, you don't press, mix or combine anything.

We use it in almost everything, but you could leave it out. It is a blend of spices, salt, red pepper, etc. The dip is also good w/o it. :)

This is a fabulous thread........Thanks to everyone for the wonderful recipes. I have been C&Ping for about 30 min. now. A huge hit that I made right before the last forum went down is the Chocolate Crock Pot Cake. Whoever put it on, claim it by all means and I will add it here for those who do not have it. It is absolutely divine if you like chocolate..
Crockpot Chocolate Cake
1 chocolate cake mix (I use Duncan Hines Moist Deluxe Devils Food)
1 pint sour cream (I use reduced fat
..not fat free)
1 small pkg. instant chocolate pudding
4 eggs
Ύ cup oil
1 cup water
1 tsp. van. extract
1 12 oz. bag mini semisweet chocolate morsels (reg. work too)
2 heaping T. sugar
Spray crock pot with Pam. With electric mixer, mix all ingredients until smooth; do not add chocolate chips until last. After mixing stir them in by hand. Cook on low 6-8 hours. (I cooked mine exactly 6 hours.) Do not remove the top while cooking. If it appears to be not quite done, leave it in the base and it will continue to cook for awhile. Serve in a bowl with vanilla ice cream or cool whip.

Tutalady - it's really just a concoction that I came up with based on a dish I had eaten at Macaroni Grill - the Pollo Sugo Al Bianco (a?) - basically grilled chicken with farfalle pasta in a asiago cream sauce.
Ingredients:
Boneless chicken breasts/tenderloins (use whatever is easiest since you will be slicing this)
Farfalle Pasta
Bacon/Pancetta (big difference I know but get what is available to you)
Bottled Alfredo Sauce (make your own, doesn't matter)
green onions - sliced - reserve some of the tops to garnish with
red onions - choped
Start Pasta water - Saute chicken in butter until done (you may put any spice you want on your chicken) - cut bacon into small pieces, brown. Add sliced green onion and chopped red onion to bacon, simmer about 2 minutes. Drain grease. Slice chicken thinly - add to bacon/onion mixture. Heat your alfredo sauce.
Drain cooked pasta. mix in chicken mixture and pour heated alfredo sauce over this - mix well. Garnish with green onion tops and serve. Goes real well with a salad and crusty bread.

Lynn my FIL loves those 7 bar cookies....I love making them as well.
My most requested recipes are Kool Aid Pie and Pnut Butter Pie
Kool Aid Pie:
Ingredients:
1 pkg Kool Aid (any flavor)
1 14 oz. can condensed milk
1 8 oz. container Cool Whip
1 graham cracker crust
Preparation:
Combine the first 3 ingredients well, pour into graham cracker crust. Refrigerate. Can be eaten as soon as it is made, but is better after at least 30 minutes of erfrigeration.
*** if using Lemonaide flavor it tastes JUST like Lemon Meringue Pie <filling>
I have made several flavors and all are good!!
Peanut Butter Pie
Crust:
1 1/4 cup chocolate cookie crumbs ( I use Oreos)
1/4 Cup sugar
1/4 Cup butter, melted
Crush cookies with rolling pin or use blender, add sugar and butter, mix well. Press cookie mixture into pie pan. Bake at 375 for 10 minutes. Cool completely.
**also can buy a graham cracker or oreo crust***
Filling:
1 8 oz. Pkg. cream cheese
1 Cup creamy peanut butter
1 Cup sugar
1 Tablespoon butter
1 teaspoon vanilla
8 oz. Cool Whip
Hershey Bar, optional
In a bowl, add the cream cheese, peanut butter, sugar, butter and vanilla. Using a mixer, beat until smooth. Fold Cool Whip into peanut butter mixture until well blended. Spoon into crust. To garnish, use a potato peeler to shave off pieces of a chocolate candy gar. Refrigerate.

Hey Maggie's Mommy - I made your black bean dip as a side dish with dinner tonight. Instead of two cans of black beans I used a can of corn and a can of black beans and drained everything really well. It was delish with chicken fajitas and rice. Thanks for the recipe.
For some strange reason, the item I get the most requests for is an old Pillsbury Bake-Off recipe, Dilly Casserole Bread, Beef and Onion Cheeseball is another one that I frequently get requests for.
DILLY CASSEROLE BREAD
1 pkg active dry yeast
1/4 cup warm water (110-115)
1 tsp. salt
2 Tbsp dill seed
1 cup lukewarm cottage cheese
1/4 tsp baking soda
2 Tbsp sugar
1 unbeaten egg
1 Tbsp instant minced onion
2 1/4-2 1/2 cups all-purpose flour
1 Tbsp butter
Soften yeast in warm water and set aside. In mixing bowl, combinme cottage cheese, sugar, onion, butter, dill seed, salt, soda and egg. Mix until blended. Stir in softened yeast. Gradually add flour to form stiff dough. Cover and let rise in warm place for about 1 hour. Stir down dough. Turn into well-greased 8-inch round casserole (about 1-1 1/2 quart size.) Let rise 30-40 minutes. Bake at 350 for 35-45 minutes. Brush with additional butter. Cut into wedges to serve.
Makes 10 servings
Note: I don't usually have dried onion so I use about 1/4 cup minced fresh onion.
BEEF & ONION CHEESEBALL
3 (8 oz) pkg cream cheese(softened)
4 chopped green onions
3 pkg dried beef
1 Tbsp Worcestershire sauce
1 Tbsp Accent seasoning
1 clove minced garlic
Chop dried beef and onion. (I chop mine in the food processor.) Mix all ingredients well. Form into a ball or log. You can reserve a cup of dried beef to roll it in or you can roll in nuts.
