Hi everyone,

I need some help! Our ladies from church are having a swim party this weekend with a meal following - what are some good ideas to take? I have to work Sat. until 5:00 so I'll be heading there straight from work. THANKS IN ADVANCE!!!

Those are beautiful but I think I like the idea of fruit better than salad. That big one looks like all you would get would be onions and tomatoes HAHA! :p

Sorry Michelle - I wasn't able to get back on again until this morning. I'm actually looking for anything. It is a full dinner at 6:00 (potluck obviously) so anything would be appropriate. I actually am thinking about taking Shell's lemonade that she has posted in FOODS as a beverage - it just sounds so refreshing. So - ANY ideas will come in handy and if I don't use them now - I will later. ;)

I have a layered salad recipe from a past SL that I just love. It's easy to make ahead, although I add the cheese before serving. I'll see if I can find the recipe.

The lemonade sounds like a wonderful item to bring - and probably not something that will be duplicated!

How about some fresh tomatoes cut into wedges, onion slices, feta, olives and a nice italian dressing? I saw this recipe somewhere and it sure looked refreshing.

Here is something that can be made ahead and actually it is better on the 2nd day. It makes a large bowl.

Mexican Dip

1 can Rotel (mild or hot)
1 sm. can chopped black olives
1 sm. can chopped green chilies (drained)
1 can whole kernel corn (white or yellow) (drained)
2 cans Petite diced tomatoes
1 8 oz. bottle of Itialian Dressing
chopped green onions (tops and bottoms)
4 cups shredded cheeses (Cheddar and Montrey Jack)

Mix all together in big bowl. Chill and serve with Frito Scoops.

It is better the second day after all the flavors have marinated together.

That Mexican dip sounds yummy.........until I read that I was thinking about Paula Deen's marinated tomatoes that I got from the old SL board and if you need it, let me know. I served it all summer with the fresh tomatoes grown here... :) sometimes with shrimp and grits and sometimes with grilled whatever and it was always a hit and recipe requested.

YUM Candlelight - that sounds great! I may have to add that to my list. Right now here is how it stands:

Lynn's Chocolate Chip Cheese Ball w/ gingersnaps
Shell's Lemonade
Crock-Pot Scalloped Potatoes
Deviled eggs
Italian Beef w/ hard rolls

Everything fairly easy, can be made the day ahead and easy to keep in the refrigerator or will be cooking in a crockpot.
