Help - I can't remember who posted this before, but I've lost my copy. I tried making it without the recipe, and I'm afraid I'm forgetting something 'cause it just wasn't as good!

Here you go.....

INGREDIENTS
1/4 cup butter or margarine
4 bone-in chicken breast halves*
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups buttermilk, divided
3/4 cup all-purpose flour
1 (10 3/4-ounce) can cream of mushroom soup, undiluted
Garnish: chopped fresh parsley

INSTRUCTIONS
Melt butter in a lightly greased 13- x 9-inch baking dish in a 425 degrees oven.
Sprinkle chicken with salt and pepper. Dip chicken in 1/2 cup buttermilk, and dredge in flour.

Arrange chicken, breast side down, in baking dish.

Bake at 425° for 25 minutes. Turn chicken, and bake 10 more minutes.

Stir together remaining 1 cup buttermilk and cream of mushroom soup; pour over chicken, and bake 10 more minutes, shielding chicken with aluminum foil to prevent excessive browning, if necessary. Drizzle gravy over chicken and Whipped Celery Potatoes. Garnish, if desired.

The recipe I saved was from Miss Char, which she got from cagl54.

Beau Catcher Oven Fried Chicken

1 chicken (cut up for frying)
1/2 cup buttermilk
1 cup flour
2 teaspoons salt
1/4 teaspoon pepper
2 teaspoons paprika
1/4 teaspoon thyme
2 tablespoons minced onion
1 stick butter

Dip chicken in buttermilk (I usually soak mine for an hour or more) then into dry mixture. Melt butter in a shallow baking pan at 400°. Remove pan from oven. Place chicken pieces in pan, turn to coat with butter. Bake skin side down 30 minutes (single layer). Turn chicken and bake 30 minutes longer.

charley's notes: I omitted onion, added some cayenne, used a mix of breasts & thighs, and baked for 20 minutes per side.

Some of the best chicken I ever had was soaked in buttermilk before cooking. Thank you for the recipes!

I'm bumping this one up from a couple years back. Found it looking for more oven fried chicken recipes. Both sound good.:)
